    It might be that the extract potential is marked a bit low in the brewing software, i know its happened before with some of the beersmith addons having the wrong extract potential.

    It's the second brew with the new 'zilla and I'm still figuring it out. Check the spec of the grains you are using in your brewing software match up the specs on the spec sheets or certificate of analysis of the malts you are using. Gives me an efficiency around 70% if I twiddle with it. Got 19L when I wanted 22L in the fermenter. Too bad my predicted post-boil volume was about 2L short and the kettle to fermenter loss was set too low. Kicked off the boil and got it "cubed" in my fermenter late last night.

    I had assumed it'd take all night to get where I want but I checked it at movie time (28 hours) and it was down to 3.7 and tasting noticeably sour. It had hardly moved by 12 hours but at 24 it was going. I checked the pH at pitch, 12 hours and 24 hours. I used 3x Inner Health IBS capsules at 35c for 28 hours. I really like fruit sours, so if this one works out I'll be making more! Just pitched yeast in my first (deliberate) sour attempt.
